I always hated large amounts of food waste when used to work in hospitality. Unfinished, even untouched food made me feel uncomfortable knowing it could be of better use to someone in need. When I baked and sold cakes for 10 years, I made sure to lower my food waste by using ingredients that would be “tossed” in creative ways (i.e saving the aquafaba juice from canned chickpeas to make a vegan chocolate mousse!)
